Chili Honey Glazed Salmon with Strawberry Jalapeño Salsa & Toasted Sesame Edamame Quinoa

Serves two

For the salsa:

one c. diced strawberries

three/iv c. diced seedless cucumber

ane jalapeño, minced

iii scallions, thinly sliced

zest of one lime

juice of two limes

one tsp. honey

For the salmon:

2 salmon filets

1 tsp. chili powder

one T. beloved

i tsp. hot sauce

one/4 tsp. table salt

one/iv tsp. pepper

olive rock oil


For the quinoa:

one one/four c. cooked shelled edamame

one clove garlic, finely chopped

ane T. sesame crude oil

2 i/2 c. cooked quinoa

1 T. sesame seeds, if desired


Begin past making the salsa. Combine all salsa ingredients in a bowl together with stir to combine. Cover in addition to refrigerate spell you lot are preparing the residual of the repast.
