Creamy Cashew Thai Chicken with Cilantro Lime Cauliflower Rice

One of my FAVORITE things inward the Earth to do is copy meals with a healthier spin, without sacrificing flavor. This one delivers..and and so more or less. SO much season y'all guys! I’one thousand in dear. The cauliflower rice makes the dish super depression carb as well as ups the veggie content, which I am e'er inwards favor of. It comes together pretty rapidly too..the nearly time consuming role of this repast is in all likelihood all of the chopping and dicing!

Another one of my new institute loves is CASHEW BUTTER. It’sec SO creamy as well as delicious. It has this sugariness to it that I tin can’t describe, simply you lot should totally pick upwards a jar if you lot haven’t tried it. If you lot’re ill of almond or peanut butter, it’second a cracking option. Let’second live real, I never go sick of whatsoever nut butter, just it’s a squeamish alter.


My favorite brand is Maisie Jane’sec. It’sec UNREAL. Target’s merely balanced brand is delicious besides.


This recipe is as well paleo-friendly, depression-carb, together with high protein! So much good.

Ingredients





  • ane
    lb.
    boneless, skinless chicken breasts, cut into bite size pieces


  • 1
    caput of cauliflower, cut into florets, then "riced" in the food processor


  • ii
    red bell peppers, diced


  • ane/ii
    c.
    shelled edamame


  • ane/ii
    of a medium yellowish onion, chopped


  • one/two
    c.
    chopped cilantro, divided


  • three
    tsp.
    coconut petroleum, divided


  • juice of i lime


  • i/three
    c.
    cashews, chopped


  • three
    scallions, thinly sliced


  • extra chopped cilantro for garnish


  • For the SAUCE:


  • i/iii
    c.
    cashew butter


  • two
    tsp.
    freshly grated ginger


  • two
    cloves
    garlic, finely chopped


  • i
    T.
    hoisin sauce (if strict paleo, you tin omit, simply this adds a lot of practiced season)


  • i
    tsp.
    sambal oelek


  • two
    T.
    soy sauce (I use low-sodium; y'all tin can use kokosnoot amigos if paleo or tamari if gluten-costless)


  • juice of ane lime


  • one/iv
    c.
    hot H2O





Instructions





  1. Begin by "ricing" the cauliflower. Put cauliflower florets inward a food processor or blender together with pulse until they plow into tiny "rice-similar" bits. Set aside.



  2. Make the sauce. Add cashew butter, ginger, garlic, hoisin, sambal oelek, soy sauce, lime juice, too hot water to a medium bowl together with whisk until completely combined as well as creamy. Set aside.



  3. Heat a large skillet over medium/high oestrus together with add together ane tsp. of the coconut crude oil. Add the cauliflower rice together with sauté for 4-five minutes or until tender.
