Grain Bowls with Grilled Corn, Heirloom Tomatoes, and Basil Vinaigrette

I am cramming every summer factor inwards every repast I possibly can until all of the beautiful create is gone. These grain bowls are filllled with around of my absolute summer faves. Grilled corn, e'er. Avocado, always. Heirloom tomatoes because they’re perfect in addition to and then gorgeous. Chopped spinach for or so greens. Spiralized zucchini because it’s fun! Delicious, tangy, herby basil vinaigrette to finish. Oh, as well as how could I forget..salty feta! All of the delicious summer things in one bowl.

  • For the BOWLS:

    cooked quinoa

    zucchini, spiralized

    spinach, chopped


  • feta crumbles for topping


  • For the VINAIGRETTE:

    packed fresh basil


  • juice of ane lemon


  • 1/ii
    c.
    champagne vinegar


  • one

    dear


  • one/ii
    c.
    olive petroleum


  • 1/4
    tsp.
    common salt


  • one/4
    tsp.
    pepper





Instructions





  1. Cook your grains according to packet directions. Use whatever you similar! Make the vinaigrette. In a high powered blender or nutrient processor, blend the basil, lemon juice, vinegar, honey, olive crude oil, salt, in addition to pepper until completely smoothen.

Recipe Notes
