Healthier Loaded Crispy Smashed Potato Bites

Ingredients





  • i three/4
    pounds
    (28 oz.) mini potatoes (mine were a mixture of cherry, purple, together with gilt)


  • two 1/2
    tablespoons
    olive rock oil


  • common salt too pepper


  • Greek yogurt for topping (I used 0%, simply 2% or whole milk yogurt would live fifty-fifty creamier!)


  • 4
    slices bacon, cooked and crumbled


  • 2
    ounces
    freshly grated cheddar cheese


  • 2
    scallions, thinly sliced





Instructions





  1. Bring a large pot of H2O to boil. Add potatoes and make for almost xx minutes, or until only barely fork tender. Drain together with fix aside.




  2. Preheat oven to 425℉.
