Leek Bacon Potato Frittata

    infant xanthous potatoes, cutting into ½'' cubes

    leek, thinly sliced

    half and half (tin can sub milk or cream)

  • sliced avocado for serving


  1. Grease a 12'' form iron skillet or baking dish with butter or cooking spray. Set aside. Preheat oven to 375℉.

  2. Bring a medium pot of H2O to a boil. Add a generous pinch of salt as well as the cubed potatoes. Boil for ten minutes or until barely fork tender. Drain together with permit cool.
