Mediterranean Spinach Salad with Farro

IMG_1067This is a salad I speedily threw together for lunch last week, but it turned out to live really delicious! I honey spinach salads, in addition to I am always looking for a variation to the norm since I consume then many of them. I added farro, which is an ancient grain amongst a nutty flavour..I’d compare it to barley. It adds approximately substance to the salad in addition to the grilled chicken does as well. The dressing is lemony in addition to fresh too the cucumbers add together the compaction I dear, as well as the feta adds a prissy salty seize with teeth. This is the perfect salad to accept to go and to take inwards the refrigerator all calendar week.

This makes 2-four servings, depending on the size

1/four c. farro, cooked

i/ii c. diced cucumber

i/four c. roasted cherry peppers, chopped

feta cheese, crumbled (whatsoever total y'all like)

Grilled chicken, cut into seize with teeth size chunks, most ane c. (optional) (I unremarkably buy chicken for the week, grill it, in addition to proceed it inwards the fridge to add to salads)

2 c. baby spinach leaves

2 tsp. chopped herbs of your choice (I used basil, oregano, together with parsley)

juice of ane lemon

i T. extra virgin olive fossil oil

Salt as well as pepper

Begin by making the dressing. Combine lemon juice, herbs, too olive fossil oil inward a pocket-size bowl and whisk together until combined. Season with common salt and pepper.

Combine cooked farro (it can still be warm, I actually like it to wilt the spinach a chip), cucumber, carmine peppers, feta, chicken, as well as spinach too toss. Pour over dressing, as well as toss until all ingredients are coated. Portion into bowls and serve!

I kept eating this all calendar week, and it didn’t bother me that the spinach got a piddling wilted from the dressing together with warm farro, I really preferred it! However, if that bothers you, you lot can keep all of the ingredients separate, too apparel the salads individually. Up to you.
