Pesto Mushroom Sweet Potato Spinach Frittata

Ingredients





  • 10
    ounces
    babe portobello (cremini) mushrooms, sliced


  • 2
    teaspoons
    olive petroleum


  • three
    ounces
    infant spinach


  • iv
    big eggs


  • ane ane/ii
    cups
    liquid egg whites (I function the natural organic egg whites inwards the carton, non the weird simulated stuff)


  • ane one/two
    cups
    diced roasted sweetness potatoes (or use whatsoever leftover potatoes or veggies you take on paw)


  • iii
    tablespoons
    of your favorite pesto


  • ane/four
    teaspoon
    salt


  • one/iv
    teaspoon
    pepper





Instructions





  1. Preheat oven to 375℉. Liberally grease a x inch form iron skillet or baking dish amongst coconut crude oil or cooking spray.




  2. Preheat a large skillet to medium-high oestrus and add together olive crude. Add mushrooms too sauté for v-vi minutes or until golden. Add the spinach and stir until merely wilted. Remove from estrus. Season alongside a pinch of table salt together with pepper. Set aside to cool slightly.
