Roasted Potato Salad with Arugula and Garlic Lemon Vinaigrette

IMG_0880So I saw these royal potatoes at Trader Joe’sec too HAD to go them. How pretty are they?! I was so excited well-nigh them that I went dorsum together with bought more.

This spud salad is a great alternative to regular murphy salad without all of the mayo, egg, too calories. It has a ton of flavor because of the garlicky vinaigrette, too the peppery arugula wilts into the potatoes. So simple in addition to and so adept.
