Veggie Noodle Bowls with Cashew Ginger Dressing

Ingredients





  • For the BOWLS:


  • eight
    oz.
    brown rice noodles


  • 1
    cherry-red bell pepper, thinly sliced


  • one
    c.
    sliced cucumbers


  • two
    large carrots, cut into ribbons using a vegetable peeler, spiralized, or shredded carrots


  • 1/two
    c.
    shelled edamame


  • two
    scallions, thinly sliced


  • i
    c.
    shredded ruby-red cabbage


  • few handfuls of spinach or kale, or so chopped


  • ane/2
    of a jalapeño, thinly sliced


  • chopped fresh cilantro


  • chopped fresh mint


  • one
    avocado, sliced


  • dark sesame seeds for garnish


  • For the DRESSING:


  • three/iv
    c.
    cashew butter (can purpose peanut butter too)


  • one
    T.
    freshly grated ginger


  • 1
    clove
    garlic, minced


  • juice of ii limes


  • 1
    T.
    soy sauce


  • 1
    tsp.
    sesame crude oil


  • ii

    rice wine vinegar


  • ane/ii

    hot H2O





Instructions





  1. Cook the rice noodles according to parcel directions. Drain too rinse amongst cold water. Set aside.



  2. Make the dressing. In a medium bowl, combine the cashew butter, ginger, garlic, lime juice, soy sauce, sesame fossil oil, together with rice vinegar. Whisk to combine. Next add together the hot water too whisk until the dressing comes together in addition to is smooth together with creamy.



  3. To get together the bowls, place rice noodles into bowls and superlative with all the veggies, sprinkle amongst cilantro and mint, tiptop amongst jalapeño together with avocado slices, drizzle alongside dressing, as well as sprinkle alongside sesame seeds.
